摘要:為保證石鰈魚的質(zhì)量安全,應用HACCP 原理對石鰈魚養(yǎng)殖環(huán)節(jié)從苗種驗收到裝箱出口的全過程進行危害分析,確定顯著危害以及苗種接受,水源選擇,飼料驗收,藥物驗收,藥物使用5個關鍵控制點,在關鍵控制點上設立關鍵限值,進行重點監(jiān)控、記錄、糾偏和驗證。多年實踐表明,HACCP體系應用于石鰈魚養(yǎng)殖,既保證了石鰈魚的質(zhì)量安全,又降低了企業(yè)養(yǎng)殖成本。

Application of HACCP in the aquaculture Safety of Exported Stone Flounder

Abstract: Apply the HACCP principal to conduct hazard analysis on the full aquaculture path of exported stone flounder from fingerlings acceptance to bin packing for export and to confirm its obvious harms and five critical control points, such as fingerlings acceptance, water source selection, feed acceptance, veterinary drug acceptance and veterinary drug use. The critical limits were established at the critical control points to conduct focal monitoring, record, modification and verification. The practice for many years showed that application of HACCP in the aquaculture not only further guaranteed the safety of exported stone flounder, but also reduced culture cost.

石鰈魚(Kareius bicoloratus)是我國北方重要的海水養(yǎng)殖魚類,以其肉質(zhì)細嫩、味道鮮美、營養(yǎng)豐富、生長速度快、病害少、市場暢銷等諸多優(yōu)點被廣大養(yǎng)殖戶所鐘愛深受消費者歡迎[1]。石鰈魚的養(yǎng)殖區(qū)域主要分布于我國的黃渤海,尤其是山東省的萊州市已成為全國最大的石鰈魚養(yǎng)殖與出口基地。近年來, 韓國對我國石鰈魚的需求量激增, 使得黃渤海地區(qū)石鰈魚養(yǎng)殖迅速發(fā)展,養(yǎng)殖面積的不斷擴大。2013年,萊州出口活石鰈魚超過600噸,貨值近千萬美元。危害分析與關鍵控制點(HACCP)體系是以科學性和系統(tǒng)性為基礎,識別特定危害,確定控制措施,以確保產(chǎn)品安全性。HACCP是一種評估危害和建立控制體系的工具,著重強調(diào)對重點環(huán)節(jié)的預防,而不是主要依賴于對最終產(chǎn)品的檢驗,屬于動態(tài)的安全管理體系[2,3]。養(yǎng)殖水產(chǎn)品質(zhì)量安全問題的產(chǎn)生和控制關鍵在養(yǎng)殖階段,從養(yǎng)殖到餐桌這一整個食品鏈條,養(yǎng)殖環(huán)節(jié)是源頭,將HACCP體系應用到水產(chǎn)養(yǎng)殖階段[4],將產(chǎn)品的安全控制關頭提前至源頭階段,可以減少對最終產(chǎn)品的檢驗,有效利用檢驗檢疫資源,對確保水產(chǎn)品的質(zhì)量安全具有事半功倍的效果。
